Fast, Cheap, Easy and Healthy part 5

Beginning week 5 and the scales dipped all the way to 149.5!! Yippee!! Now I must say that I stepped back on the scales shortly thereafter and it wasn’t quite that low, but I figure once I see a number, it counts.

There were no great challenges this week, in terms of celebrations and opportunities to overeat, but I spent one whole day cooking while Mac filmed for leoncountytoday.com so we had to eat the food. However, it was all healthy and, hopefully did little harm.

I walked fourteen miles this week with most of them being outside. The more I read the more I believe that getting outside is extremely important. One article on everydayhealth.com says Vitamin D, the sunshine vitamin, is essential to your health because your body uses the vitamin to help absorb calcium and help you body run more efficiently. So get outside. I am from the generation where us ladies don’t like for our hair to blow. If you are one of those, put on a headscarf (remember those) and go.

I am still getting good response to Fast, Cheap, Easy and Healthy. One sweet lady said she went right out and bought some cabbage to cook. One said that I must be the bravest woman in Leon County to put my weight in the paper. No comments on leoncountytoday.com and that disappoints me but this week there will be a “very funny” film clip of my making chocolate dipped strawberries for Valentines. Please watch it and comment. Even if it is just “That has got to be the dumbest thing I have ever seen.”

Speaking of chocolate dipped strawberries, that is one of the things we will discuss this week. While outdone by blueberries, strawberries are full of antioxidants and one cup has more than 140% of your daily vitamin C requirements and some say its nutrients can fight certain types of cancer.

Dark chocolate is the healthiest chocolate you can eat, but I’ve got to tell you the chocolate I used in the dip is milk chocolate. But, in my opinion, if you are going to spurge on a sweet, a milk chocolate dipped strawberry seems the way to go. Rather than whole nougat of sugary candy, the inside of this beautiful treat is a healthy strawberry.

So in this case I went to Brookshire Brothers in Buffalo and bought a package of strawberries, probably one pound, for $1.50. Then I bought one of the containers of chocolate wafers, $1.99, that you put into the microwave to melt. Followed the instructions and covered all twelve of the strawberries in the container then had enough to do at least that many more. I cut up some bananas and apples just to use up the sauce. To make them pretty I drizzled some white chocolate on the strawberries and they were beautiful. Be sure to leave the leaves on the fruit so you can hold them while you dip and they look really pretty if you give the berries as a gift. This is truly fast, cheap, easy and healthy.

I’m also talking about the banana this week, which is on almost every “healthy” list you can find. One banana provides about 450 mg of potassium per serving, which translates to about 15% of your daily requirement. They also have about 3 grams of fiber, along with various amounts of magnesium, vitamin C and multiple other nutrients. Try to eat at least two fruits per day and three vegetables, more if you can.

Since I had the strawberries and bananas I wanted to show how to make a wonderfully delicious, healthy smoothie. I use non-fat yogurt and skimmed milk. Fruit Smoothie 1-cup non-fat yogurt 1-cup skimmed milk 1 frozen banana 1 cup chopped, frozen strawberries 1 tsp. vanilla

Put all ingredients into a blender and blend until smooth. If you like more sweetness add some Splenda or whatever sweetener you prefer. This makes enough for two very large glasses of super tasting nutrition.

This week will be a super challenge. It is my birthday!! The big 70!! Trying to plan ahead and this column has certainly helped to keep me honest. Have a great week. Drink your water. Take a walk and eat lots of fruits and vegetables.
