Straight from The Horse’s Mouth
I opened THM with a passion to bring some needed services to Buffalo. I wanted to hang out in a bookstore, and thought others might as well. I wanted to stretch myself and try new things...yes, in Buffalo! Now, after a year and a half, I realize how lucky I was to survive the opening, and how blessed I am to be having this Buffalo, Texas experience. Where else could I share my obsessions with espresso and fruit puree?
It started slowly with the lattes, and for good reason; there is more science and art in creating a great shot of espresso than I ever imagined. Comfortable with the shots now, so on to the next fascination.
I researched healthy frozen fruit drinks and smoothies and found that affordable commercial concentrates are full of sugar and preservatives. But, our small town provides us with the opportunity to do things RIGHT instead of compromising the way some big corpora- tions do. So, I've returned to 'old-school' home-made fruit purees. It's labor intensive, but worth it. We've created all natural recipes (many appropriate for diabetics), and developed a mouth watering menu that just shouts summertime! Honestly, this is more fun that a person should be allowed to have at work.
I found a way to see that nothing goes to waste. We puree the entire fruit for the drinks. This gives you all the fiber, vitamins and minerals nature has to offer, throwing away nothing. We make fruit flavored simple syrup and candied citrus from the peel. The only thing in the compost is the pith.
I could go on and on, but the blender is calling my name.
May is a busy month. We're now open later every Friday night (to around 8-9:00pm), we have a STROKE Education class at 9:00AM on Wed. the 19th, Open Mic Night on the 21st, and Trivial Pursuit/Pot Luck Dinner on the 28th.
